To create these neon deeeeelights, start by making some dragonfruit syrup.
Place the pulp of one pink dragonfruit, 1/4 caster sugar and one cup water in a saucepan. Bring to the boil and then reduce to a simmer until liquid halves. Allow to cool. Pour into a sterilised jar and cool overnight.
Now, create a margarita…..just the way you like it.
Add dragonfruit syrup until desired flavour and/or colour is achieved.
Garnish with both pink and white dehydrated dragonfruit.
