Blueberry & Blackberry Tart

To create the filling I used:
2 punnets fresh blackberries
2 punnets fresh blueberries
2 tablespoons organic stevia
1 cup water
2 tablespoons cornflour
Sprinkling of mixed spice

Place all ingredients (except cornflour) into a saucepan and bring to boil. (Retain 15ml of syrup at this stage … you will need it for a margarita)

Reduce to a simmer. Mix cornflour with a dash of water into a paste.

Stir through the paste into a berry mixture and turn off the heat when the mixture has thickened

I pre-baked some pastry and then added the mixture. I topped with some lovingly made little pastry scrolls

Bake in the oven until lightly browned. Serve with full delicious cream
