‘Freeze me out’
The other day I cleaned out the freezer (yes, Covid-isolation makes you do craaaaazy things) and I found a couple of punnets of freshly frozen blueberries
I used one cup of the berries to make a sugar free syrup.
I used one cup blueberries, 1 cup water and 2 tablespoons organic stevia. Bring to the boil, reduce to a simmer until liquid approximately halves. I would normally stay strain the liquid and refrigerate before using. I forgot to do this part and left the blueberries soaking in the syrup overnight. The result is a very delicious and rich coloured syrup!
I used some more of the frozen blueberries for this garnish pick
Add ice to your favourite tall glass, 60ml or so of your favourite gin, soda water and the syrup to taste. Garnish with fresh glorious basil (sadly not from garden because it’s too cold to grow in Melbourne right now)
