Tomato Water with Vermouth

I love tomato water. I bang on about all the time! It’s great for bloody Mary’s, martini’s and simply on it’s own. It’s so crisp, light and refreshing!

Chrissy @socialgingirl had asked me for a recipe and I gave her a verjuice based recipe that I had been using. Chrissy was having trouble sourcing verjuice … so we wondered if vermouth would work instead?

Well let me tell you, it does! I am so happy with this recipe.

To create this tomato water, I used:
1kg Ripe Tomatoes
2 teaspoons Salt Flakes
1/2 cup Dry Vermouth
6 sprigs Lemon Thyme
Good Crack of Black Pepper

I whizzed all together in @thermomixaus on speed 10 for 2 minutes

Line a large sieve with a nut milk bag and place it over a bowl or saucepan.

Pour the tomato mixture into the sieve and tie up the bag.

Allow to hang until water is extracted. Refrigerate!

I have simply served this delicious tomato water with extra tomatoes and lemon thyme.
