‘Plum, this is Cranberry’
- 90ml @etchsparkling PLM
- (Davidson Plum, Riberry & Strawberry Gum)
- 60ml cranberry juice
- 15ml lime juice
- 15ml homemade sweet and sour mix
- 15ml homemade star anise and cinnamon lower sugar syrup
Place all ingredients in a cocktail jug and stir well until combined.
Rim your favourite cocktail glass with cinnamon sugar. Fill with ice and double strain the mocktail into the glass. Garnish with frozen cranberries and rosemary.

To make the Star anise and cinnamon syrup I used, 1 cup water, 1/2 sugar, good pinch of broken star anise pieces and I cinnamon stick. Place all ingredients in a saucepan and bring to the boil. Reduce to a simmer until liquid halves. Allow to cool before refrigerating.
To make the sweet & sour mix, I placed 1/2 cup water & 1/2 cup sugar in saucepan. Boil and simmer until the liquid halves. Allow to cool slightly and add 1/2 cup of fresh lime juice and 1/2 cup of fresh lemon juice and stir. Allow to fully cool before refrigerating in a sterilized jar
