It’s 42 degrees in Melbourne right now and I am cooling down with this this very crisp and fresh Margarita.
45ml Tequila infused with Lemongrass for 72 hours
15ml chilli Liqueur
45ml Lime Juice
3 mint leaves
5 pink peppercorns .
Place all ingredients in a cocktail shaker with ice and shake vigorously for around a minute.
Double strain into a cocktail glass and serve with ice, star anise, dehydrated lime, lemongrass and more pink peppercorns
