Recipe:
90mls @sesiontequila blanco
30mls @cointreau_officiel
90mls freshly squeezed lime juice
1/2 cup raspberry Granita
Jalapeño to garnish
How to: Mix tequila, Cointreau and lime juice vigorously in a cocktail with ice. Pour into a glass and add Granita and Jalapeño to serve.
Result: The sweetness of the Granita is well balanced against the lime and Jalapeño. Enjoy!
Combine water and sugar in medium saucepan and stir over medium heat until sugar dissolves. Bring to the mixture to the boil.
Remove the syrup from the chill until cold.
Mash 3 cups fresh raspberries and stir in lime juice. Mix in sugar syrup and put through a strainer pressing on the berries to Pour mixture through to extract as much liquid as possible.
Pour mixture into a dish freeze until almost firm, stirring frequently, about 2 hours.
Continue freezing granita until firm for at least 3 hours or overnight.
Using a fork to scrape the surface of granita to form crystals.
