Burnt Lime Syrup

Burnt Lime Syrup:

4 large limes cut into slices.

2 1/2 cups water

1/2 cup white sugar.


Place limes in a hot oven until they are slightly burnt.

Place all ingredients into a saucepan. Bring to the boil. Reduce to a simmer until the liquid reduces to around half.

Strain the liquid into a container and refrigerate overnight.
