Tamarind Juice

Sweet Tamarind Juice:

Peel 450 grams Sweet Tamarind into a bowl.

Set aside Tamarind shells.

To the pulp, add 2 tablespoons freshly squeezed lime juice and 8 cups boiling water.

Add 1 tablespoon sugar.

Cover with Cling Wrap and let in sit over night.

Hand squeeze the pulps to produce the juice and strain.

Sweet & Sour Tamarind Juice:

Use sweet&sour Tamarind and repeat the above except use 2 tablespoons of sugar.
