Mexican (Taco-ish Tuesday)
My home buffet includes:
Twice cooked pork: I used left over bbq pork chops and slow cooked them all day in salsa, paprika & cumin
Taco mince (ground beef): I simply browned the beef and seasoned with taco seasoning
Street corn: I started by baking the corn in the oven. To make the dressing I simply used kewpie mayonnaise, sweet smoked paprika and lime juice. Then all you need to do is the top the corn with the dressing and Mexican cheese blend
Fish: Tempura fish fillets (@aldiaustralia )
Chopped Vine Tomato
Mexican cheese blend (@costco_aus )
Sour Cream
Homemade Guacamole (I used avocado 🥑, sour cream, parsley, fresh lime juice + salt 🧂 and pepper)
Iceberg lettuce 🥬
Organic coleslaw 🥗 + Kewpie mayonnaise (@woolworths_au )
We tried out the new Tortilla Pockets from @oldelpaso Paso … they were a hit!
