Tomato Relish

I used:

200 g red onion – cut into quarters

1000 g ripe tomatoes

250 g granny smith apples, peeled, cored & cut into quarters

150 g raw sugar

200 g organic apple cider vinegar

Good Pinch of allspice

1/2 teaspoon minced ginger

1/2 teaspoon smoked sweet paprika

2 whole cloves

100 g sultanas

2 teaspoons sea salt

I peeled the tomatoes by scoring them (with a cross), place in a large bowl that can be covered (I used my thermoserver). Leave for 5 minutes or so – then the skin will just peel off

Now chop the red onion and apple in your Thermomix for 5 seconds, Speed 6. Set aside.

Time to chop the tomatoes for 5 seconds, Speed 5.

You can now add all the other ingredients and cook for 60 minutes, speed 1.5 (reverse) temperature 100 degrees.

Store in sterilised jars in the fridge!
