My COVID ‘Caprese Salad’
I was finally able to leave the house today after receiving my Covid negative result (wahoo!)
I really felt like a fresh Caprese salad with sliced fresh mozzarella, tomatoes, and basil
I found some amazing Adelaide tomatoes but in my haste to get in & out of the supermarket, I accidentally picked up Burrata instead of mozzarella.
Well, this turned out to be a fabulous mistake! Burrata is an Italian cow milk cheese made from mozzarella and cream. The outer shell is solid mozzarella, while the inside contains stracciatella and cream, giving it an unusual, soft texture (@wikipedia )
I served the amazing tomato & burrata with the best (somewhat wilted) Basil I could find and dressed with a delicious balsamic glaze
Another fabulous case of all’s well that ends well!
