Mexican Lasagne

Mexican Lasagne… right in time for #nationaltequiladay

I started by slow cooking beef mince, dried red kidney beans, grated carrot, onion, garlic, cumin, oregano, smoked sweet paprika and Passata all day. Stir is fresh corn kernels just before you start the layering!

I made a very cheesy bechamel sauce and added taco seasoning to the sauce

Grease your tin, first layer is tortilla, mince mixture & then cheesy taco sauce. Repeat!

Top layer is tortilla’s covered in your favourite cheese

Bake in the oven and allow to ‘set’ before serving
