Roasted Apricot Chicken with Thyme

TONIGHT’S DINNER

Roasted Apricot Chicken with Thyme. I marinated the chicken legs with a can of apricots (syrup and all), onions, garlic and thyme. I added some olive oil and baked in the oven in the marinade.

Side dishes:
Red Wine Vinegar roasted vine tomatoes
Rocket and Parmesan salad
Bocconcini
Mashed Potato with Parmesan

Simple. Delicious
