Lime Caviar.
What is it?
The Australian finger lime is a thorny understorey shrub or small tree of lowland subtropical rainforest. (@wikipedia )
Inside the finger lime’s skin are juice-filled pearls that ‘pop’ in the mouth. They are very sour and just so gawd darn delicious!
The pearls’ colour differ opaque, green, pink, red and shades in between.
How to enjoy: I simply garnished a classic Margarita with these beauties and an edible flower.
If you like a great burst of sour, you really need to try this!
