Infused Cocktail Foam!

I spent some time over the long weekend working on creating some interesting, different and unusual aquafaba* infusions. .
This is the 1st of many! .

Recipe:
45mls Mezcal
30mls @Cointreau
60mls fresh grapefruit juice
20mls Jalapeño infused aquafaba ..

Place all ingredients in a cocktail shaker with ice and shake vigorously for around a minute.

Double strain into your favourite cocktail class and garnish with grapefruit and jalapeño.

Foam Result: the jalapeño foam gave this cocktail a mild spicy kick! I thought it would be spicier than it turned out. Perfect for those that don’t like things too hot 🔥 🌶 .

*aquafaba is is the name for the viscous water in which legume seeds such as chickpeas have been cooked (@wikipedia)
