Okay.. I have been intrigued by Kerry’s @athomecocktails recent Aquafaba foam cocktail. It’s the water that chickpeas sit in and it can be used as a substitute for the egg white to create foam. Here is what I used:
30mls @patron tequila
30mls Vok Melon Liqueur
30mls freshly squeezed lemon juice
I dry shaked the cocktail for around 4 minutes and it just didn’t foam up ?maybe I didn’t use enough Aquafaba? maybe I didn’t shake for long enough? maybe I am not as clever and talented as Kerry. So I added half an egg white and it created the perfect firm foam! The egg white and Aquafaba did not overpower the cocktail at all. I garnished with pomegranate and mint. Salud!
