Heart Beet Margarita

Today I have beet the odds and reached day 15 of my healthy margarita challenge. Please enjoy my “Heart Beet” Margarita.

Recipe:
30mls @donjuliotequila Reposado Tequila
30mls freshly squeezed lemon juice
15mls @cointreau_officiel
60mls Hibiscus Tea
30mls Home-made beetroot juice*

How to: I placed all ingredients in a high-speed blender with ice until well combined. Double strain into you favourite cocktail glass. Garnish with dehydrated lemon, orchid and thyme.

Result: I am going to eat more beet to keep fit. This is really earthy and ridiculously delicious.

⏺Lemon juice 30mls 8 calories 2.6 grams carbs
⏺Cointreau 15mls 47 calories, 3.5 grams carbs
⏺Beetroot juice 30mls 13 Calories, 3 grams carbs
⏺Hibiscus tea 0 calories, 0 carbs

TOTAL: 132 Calories & 9.1 grams carbohydrates

* To make the beetroot juice, wash 400 grams beetroots thoroughly. Place in a saucepan with cold lightly salted water to cover the beetroots and bring to boil. Reduce to a simmer and cook until the beetroots are softened. Remove from the water (retain the water) and allow to cool to touch. Peel the beetroot with your fingers (it will just peel off). Chop the beetroot and add to @thermomixau and add 2 cups of the retained water. Blitz on speed 9 for at least 1 minute. Strain into a container.
