Chicken Pesto and Simple Sides

Another simple meal with fresh produce.

You will need:

  • Pumpkin
  • Chat potatoes
  • Carrots
  • Vine Cherry tomatoes (cheapest at Aldi Australia)
  • Chicken thighs
  • Pesto (I used pesto purchased at Costco – a very large container for only $10)
  • Organic Coconut oil (purchased at Aldi Australia)
  • Olive oil
  • Balsamic Vinegar
  • Salt and Pepper

Start by cutting pumpkin (skin on) into bite size pieces)

Chop chat potatoes into quarters (skin on)


Place pumpkin and potatoes on baking paper (saves washing up time) in a baking tray with organic coconut oil.

Season with Salt and Pepper. Bake in the oven for around 45 minutes on 180 degrees

Place Cherry tomatoes on the vine in a baking tray with olive oil and balsamic Vinegar

Chop carrots into small pieces

Place in Thermomix Steamer basket. Fill the bowl with water. Cook for 15 minutes on Speed Varoma for 15 minutes

Cook whole pieces of chicken in a saucepan until slightly browned. When they are cooked through, allow to cool slightly, cut into smaller bite size pieces and stir through your desired quantity on pesto.


And voila! Here it is!!!
