I used:
60ml Plantation Pineapple Rum
30ml Lemon Juice
30ml No added sugar homemade burnt pineapple syrup
30ml Aquafaba.
Place all ingredients in a cocktail shaker with ice and shake vigorously until foam forms.
Double strain into your favourite cocktail glass. Wait for the foam to settle and garnish with a homemade dehydrated pineapple slice
