I used:
30ml homemade fruit salad shrub
30ml homemade low sugar coconut syrup
30ml Lime Juice
30ml pineapple juice
120ml gingerbeer Sugar Free
Pulp of half a Passionfruit .
Place all ingredients (except ginger beer) in a cocktail shaker and shake vigorously until combined. Add ginger beer and stir until combined. .
Double strain into your favourite pineapple cocktail glass. Garnish with mint and Passionfruit .
