‘Cumin Corned Beef Fritters’
I started by slow cooking a large corned beef in apple cider vinegar, bay leaves and peppercorns. I like to use corned beef with a good layer of fat as it keeps the meat very moist during the cooking process
To make the fritters I used:
4 eggs
160 grams skim milk
2 Cups Self Raising Flour
1 teaspoon cumin ground
Pinch baking soda
Whiz on speed 4 in @thermomixaus for 30 seconds
Fold through corned beef and red onion (finely chopped)
Cook until lightly golden
I served with fried capers (thanks @thebitterfairy for this idea), avocado, tomato, chilli jam, homemade Tzatziki, baby cucumbers and fresh dill
