Tequila is a regional distilled beverage and type of alcoholic drink made from the blue agave plant, primarily in the area surrounding the city of Tequila, 65 km northwest of Guadalajara, and in the highlands (Los Altos) of the central western Mexican state of Jalisco. Tequila must use only blue agave plants rather than any type of agave. Agave grows differently depending on the region. Blue agaves grown in the highlands Los Altos region are larger in size and sweeter in aroma and taste. Agaves harvested in the lowlands, on the other hand, have a more herbaceous fragrance and flavour

Mexican laws state that tequila can only be produced in the state of Jalisco and limited municipalities in the states of Guanajuato, Michoacán, Nayarit, and Tamaulipas.

The are 5 types of tequila:

Tequila silver – most commonly used in margaritas – tequila in it’s purest form – unaged

Tequila gold – where colours and flavourings have been added prior to bottling or it may be a silver Tequila blended with reposado and/or añejo tequila. It is also often used as a mixing tequila

Tequila reposado – rested and aged tequila – usually aged for 2-11 months

Tequila añejo – aged for at least a year – smoother, richer and more complex

Tequila extra añejo – aged for more than 3 years – extremely smooth and complex
